2 c. all-purpose flour
2 Tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt

Directions:
Directions:
Mix ingredients and store in a clean airtight container. You can double or triple this recipe. It will keep a long time. When you want to mix up the batter, add 2 1/2 cups of the pancake mix, 2 beaten eggs, 2 cups milk, and 4 tablespoons oil.
Note: This works well for Belgium Waffles also.
