1 Lg Whole Chicken or Chicken parts
EVOO
Fresh squeezed Lemon Juice
Parsley, chopped
Basil, chopped
Garlic, chopped or Granulated Garlic
Fresh or Dried Oregano
Salt
Potatoes (Optional)

Directions:
Directions:
1. Place chicken in a deep baking dish and lightly salt.

2. In a bowl, mix 1 part EVOO to 2 parts lemon juice. Add remaining ingredients (except the potatoes) Stir well.

3. Pour over chicken and turn chicken so it is all covered with the marinade. Marinate for 1 hour.

4. Preheat oven to 365. Bake for about 45 minutes or until cooked and browned.
NOTE: you can add potatoes in pan before baking.
