1 can #2 tomatoes or 2 and 1/2 c. tomato juice
1 & 1/2 c. water
1 & 1/2 c. rice
1 tsp. salt, same of sugar
2 tbsp. margarine

Heat all ingredients together, boil 5 mins., put in casserole and bake 1 hr. at 350.

Note on the back of recipe from Grandma Florence: "The proportions of liquid ( 4 c.) to 1 & 1/2 rice is the important thing. I sometimes use all tomato juice, sometimes half and half. Sometimes a big can of tomatoes, not steamed and water to make difference. Sometimes don't boil first, but then you must allow it a little longer than 1 hour."
The family story behind this recipe is that Grandpa made it up back in the early 30s. Shortly after they were married, Grandma had a job teaching in Derby Line, Vermont and Grandpa was a busy house spouse. The recipe has been a family favorite ever since -- and is still a bargain today!
