2 eggs
2/3 c.honey
1/2 c. oil
1 c. plain yogurt
1 tsp. vanilla
2 1/4 c. unbleached flour
1/2 c. oat bran
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 c. coarsely chopped walnuts
1 heaping cup fresh blueberries

Directions:

Preheat oven to 350º. In a large bowl, combine the eggs, honey, oil, yogurt and vanilla. In a separate bowl, mix together the flour, oat bran, baking soda, baking powder, salt and walnuts. Gently fold the dry ingredients into the wet ingredients, folding in the blueberries just before the batter is completely mixed. Coat muffin pans with a nonstick spray and fill about 2/3 full with batter. Bake in oven for 20-25 minutes or until a toothpick inserted in the center comes out clean. Set on rack to cool. Makes 18 muffins.
