1 3/4 c. flour
1 1/2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
2-3 smashed bananas (ripe)
1/2 c. oil
1/4 c. buttermilk plus 1 Tbsp.
1 tsp. vanilla
1 c. walnuts (chopped)

Directions:
Directions:
In a large bowl, mix together flour, sugar, baking soda, and salt. In another bowl, combine eggs, bananas, oil, buttermilk and vanilla. Add wet mixture to dry ingredients until well combined. Fold in nuts, pour into greased and floured loaf pan. Bake at 325 for 1 hour and 20 minutes or until tested done. Cool 10 minutes and remove from pan to wire rack.
Note: You can add 1 cup chocolate chips to batter for Chocolate Banana Bread. This recipe does not double well.
