"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

2 1/2 tsp. double-acting baking powder
1 tsp. salt
1/2 c. butter or Crisco
2/3 - 3/4 c. milk

Directions:
Combine flour, baking powder and salt in mixing bowl. With a pastry blender, cut in butter until it is broken into fine particles. Add milk and stir gently with a fork until dough holds together. Gather dough into a ball, turn onto a lightly floured board and knead gently with floured fingers, about 12 kneading strokes. On a lightly floured board, roll dough 1/2 inch thick. Cut dough with floured biscuit cutter and place biscuits on a greased baking sheet about 1 inch apart. Bake at 400º for 12-15 minutes.
For Buttermilk Biscuits: Reduce baking powder to 2 tsp., add 1/2 tsp. baking soda to dry ingredients and use sour milk or buttermilk in place of the milk.
