Crush 1 cup fresh strawberries and cook with 1 cup water about 2 minutes; sieve.
Combine 3/4 cup sugar and 3 T cornstarch; stir into berry juice. Cook and stir till thickened and bubbly. Food coloring (optional), a few drops.
Place 1 1/2 cups fresh strawberries in baked and cooled 8" pastry shell. Pour half the sauce over. Repeat layers with 1 1/2 cups berries and remaining sauce.
