one package frozen cheese tortellini
one 14.5 oz. can diced tomatoes, drained OR 6-8 Roma tomatoes, cut and seeded
1 tsp. balsamic vinegar
1/2 tsp. salt
1/4 tsp. pepper
3 tbsp. fresh snipped basil
2 tbsp. olive oil
2 cloves garlic
1/4 c. fresh grated or shaved Parmesan cheese

Directions:
Directions:
Put tomatoes in a medium bowl and add the balsamic vinegar, salt, pepper, and basil. Set aside. Cook tortellini according to the package directions. Press garlic and saute in olive oil in large pan until golden. Add cooked tortellini and tomato mixture to the garlic and oil. Saute until tomatoes are warmed through. Sprinkle with Parmesan cheese and serve immediately.
