tomatoes from the garden, peeled, enough to fill the gumbo pot half full
1 bulb garlic, peeled and chopped
2 yellow onions, chopped
Sebriana's peppers 10-15
salt to taste
Vinegar 1/2 cup
oregano 2 tablespoons

Directions:
Directions:
Place all ingredients in large stock pot. Simmer until sauce reduces and becomes thick. Can in sterilized jars.

Nana Margie spoke English and Sebriana spoke Spanish. Lucky for us, they both spoke cooking! The two ladies were neighbors and great friends. While all ingredients were from the two lady's gardens, I am guessing the peppers were a mix of Fresno chilies, jalapeņo, and Anaheim.
