2 T. butter or margarine
2 slices bread, cubed
2 T. Parmesan cheese
1 T. minced parsley
1 clove garlic, minced
1 lb. fresh or frozen filets (cod, perch, halibut), thawed if frozen
1/2 tsp. salt
dash pepper
1/4 tsp. tarragon leaves
1/4 cup light cream

Directions:
Directions:
Microwave butter in a 9" glass pie plate until melted. Add bread cubes; stir to coat evenly with butter. Stir in Parmesan cheese, parsley and garlic.
Microwave uncovered, 4 to 5 minutes or until bread is dry and lightly toasted, stirring 3 or 4 times. Cook.
Arrange filets in 8" round glass serving dish, rolling up filets as necessary to fit dish. Sprinkle with salt and pepper and tarragon. Pour cream evenly over filets. Cover with waxed paper. Microwave 4-4 1/2 minutes, or until fish flakes easily with fork. Crush bread cubes with fork. Sprinkle over filets.
