1/2 C. Burgundy
1/2 C. White Grape Juice
1/2 C. Cider Vinegar
1/4 C. dark Brown Sugar
12 Peppercorns
10 thin slices Fresh Ginger
6 Bay Leaves
8 whole Cloves

Directions:
Directions:
Mix all above ingredients in a glass bowl, DO NOT USE METAL. Place roast in brine and refrigerate 48 hours. If brine does not cover roast, turn occasionally.

To roast, drain meat and pat dry. Brown in oil and roast in covered pan at 350. After first 30 min of roasting heat enough brine to boiling to and add to cover roast half way up. Roast until done.....time will depend on the size of your roast.
