Ingredients:  
Ingredients:  
1 bunch of spinach (or chard, collard greens etc)
1 clove of garlic (finely chopped)
1 cup of flour
1/2 cup of water
1 egg
A pinch of saffron
Olive oil for frying

Directions:
Directions:
Steam spinach; drain and chop into pieces.
Add rest of ingredients to spinach.
Mix well – mixture should not be too liquid.
Heat about 1 cup of olive oil in non-stick pan.
Using a tablespoon, drop batter into hot oil.
Fry for a couple of minutes on each side.
