2 cup pared and grated potatoes 3 eggs 1 1/2 tbsp. flour 1 tsp salt 1-3 tsp. grated onion (if desired) applesauce or catsup
Mix grated potatoes and eggs. Combine flour and salt and add mixture to potatoes along with onion. Shape into patties. Saute in 1/4 cup olive oil. Flatten with spatula. turn and brown the second side until crisp. Test for doneness. Serve with applesauce or catsup. Easier way: instead of starting with raw potatoes, use left over mashed potatoes!
