2 lbs ground lean beef (or bison)
3 tbsp. oil
1 chopped onion
2 cloves garlic, mashed
1/2 lb fresh mushrooms (optional)
3 tbsp. flour
1 tbsp. catsup
1/2 tsp. salt
1/8 tsp. fresh ground pepper
2 cups beef broth
1/4 cup dry white wine
1 tbsp. snipped fresh dill (or 1 tsp dried)
1 1/2 cups low fat sour cream
bow tie or other whole wheat noodles

Brown meat. Set aside. Add oil to skillet, saute onions, garlic, and mushrooms about five minutes. Add meat, flour, catsup, salt, and pepper. Cook three minutes to get rid of raw flour taste. Gradually add broth. Simmer slowly to thicken and reduce. Add wine, dill, and sour cream. Serve over noodles.
