Ingredients:  
Ingredients:  
1/4 - 1/3 cup olive oil
1 crushed garlic clove (generous)
1/4 tsp. salt
1 good sized head of romaine lettuce
1 egg yolk
juice of 1/2 a lemon (whole if small)
1/4 - 1/2 cup of grated Parmesan cheese (start with a big chunk)
croutons
(I don't use anchovies but you may)

Directions:
Directions:
Mix olive oil, crushed garlic, and salt. Let sit so oil becomes garlicky. Toss mixture with greens. Drizzle egg yolk over greens and toss well. Add lemon juice. Toss again. Sprinkle cheese over salad, add croutons, and toss again.
