4 cups water
1 1/4 cups yellow or white cornmeal
1 tsp. salt
4 tbls butter
pepper and salt to taste.

Cook according to the previous recipe (See Cheese Grits recipe also by Johanna Martin). Then, lightly grease a 7x4x2 inch loaf pan. Pour polenta into pan and brush lightly with butter. Let stand until cool. Cover and refrigerate until firm. To fry or grill, slice 1/2 inch thick and let dry on wire rack for about 20 minutes Brush with olive oil and fry or grill until crusty.
