"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
9 oz pasta shapes
1/4 tsp salt
1/2 stick butter
5 tbsp all purpose flour
1 3/4 cup milk
1 cup cheddar cheese, grated
4 1/2 oz cooked ham, roughly chopped
4 cherry tomatoes, cut into quarters
salt and pepper to taste
1/4 cup Parmesan cheese, grated

Directions:
Directions:
Prepare pasta; set aside. Gently melt butter in a pan over low heat. Add the flour and mix well. Cook mix for 1 minute and then remove from heat. Stir in the milk, a little at a time, to make a smooth sauce. Put pan back on heat. Stir while the sauce thickens so it doesn't go lumpy. When the sauce boils, turn down heat and cook, stirring for 1-2 minutes. Remove from heat. Mix in the cheddar, ham and tomatoes. Season. Mix pasta with the sauce. Place in overproof dish and sprinkle with Parmesan. Bake in oven, on a baking sheet for 20-25 minutes.
