1 cup sugar
3/4 cup margarine, softened
3 T extra firm silken tofu, mashed with a fork
4 T molasses
2 cups flour
1 tsp cinnamon
1/4 tsp ground cloves
1/8 tsp ground ginger
2 tsp baking soda
dash salt
extra sugar to roll cookies in

Cream together sugar and margarine. Add molasses and tofu and mix well. In second bowl, mix dry ingredients together, then add to molasses mixture. Roll into 1 inch balls. Roll in granulated sugar. Bake on parchment paper or ungreased cookie sheet at 350 for 10-12 minutes.
