1 cup polenta
1 cup cornmeal
4 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
3/4 cup oil
2 cups buttermilk
2 eggs
1/4 cup honey or sugar

Directions:
Directions:
Makes 12 large muffins
Heat oven to 425° - oil tins
Mix all dry ingredients together.
Mix oil, eggs, buttermilk, add to dry ingredients.
Bake for 15 min. The tops should crack a little.
