3 C. flour
2t. baking powder
2t. soda
1 t. salt
2 t. cinnamon
2 t. vanilla
3 eggs
1 C. oil
3 C..shredded carrots
1 can crushed pineapple

Icing

1 pound powdered sugar
1 8 oz. cream cheese
2 T. butter
2 t. vanilla
-enough pineapple juice to spread well

Directions:

Mix eggs, oil, vanilla and pineapple. [save some of the juice from the pineapple for frosting]
Combine dry ingredients. Add carrots and nuts.
Bake 300 degree oven for 1 hours in a greased, floured 9" by 13" pan.

This cake is usually made at Easter in our family, although it is good enough to serve any day of the year! If served at Easter, the cake is usually decorated with "carrots" which determines the size of the piece.
