2 acorn squash
1 lb bulk sausage
1/2 cup chopped onion
1 egg, lightly beaten
1 cup apple cider or sweet apple juice
1 cup Granny Smith apple, peeled and chopped
1 pkg Stovetop stuffing mix

Directions:
Directions:
Pour cider into 9X13 baking dish. Cut squash in half and place in dish (cut side down). Cover. Bake at 350º for 20 minutes. While squash is in oven, brown sausage and drain grease. Mix remaining ingredients together with sausage. Remove squash from oven, place them (cut side up) in the pan. Fill squash centers with stuffing mixture. Cover and bake at 350º for an additional 30-45 minutes or until squash is tender. Serves 4.
