2 or 3 chicken breasts
2 T vegetable oil
1 onion, halved and sliced
1 cup celery, sliced diagonally
1 green pepper, cut in strips
2 cups pineapple chunks
2 tsp corn starch
1/2 tsp cinnamon
1 1/2 tsp soy sauce
cooked rice

Directions:
Directions:
Drain pineapple, reserving juice. Combine corn starch, cinnamon and soy sauce in a bowl with pineapple juice. Cut each chicken breast half into 10-12 strips. Over high heat, saute chicken strips in vegetable oil. Sprinkle with salt (optional) and stir constantly for 3 minutes. Add onion, celery and green pepper and continue to cook, stirring constantly for 2 minutes. Add pineapple, then juice mixture. Stir and bring to a boil; reduce heat and cook until clear. Serve over hot rice. 4 servings.
