8 C slaw mix (Sam's Club)
2 T finely minced sweet onion
1/3 C sugar
1/2 t each salt and pepper
1/4 C each half n half and buttermilk (whole, but low-fat will work)
1/2 C Hellmann's or Duke's mayonnaise
2 1/2 T lemon juice (3 fresh Meyer lemons would make it special)
1 1/2 T cider vinegar

Re-chop the slaw mix into a finer mix with an 8" chef's knife. Blend the dressing together in a bowl....and you may find that you need more dressing. Mix all thoroughly in a 10 quart bowl. Put in a plastic container and refrigerate overnight before using. If you double the dressing recipe and use a whole 2-pound bag of cole slaw mix from Sam's Club, you will be just fine, but if you like a lot of dressing, triple it instead..
