3/4 to 1 lb. lutefisk per person

Directions:
Directions:
Purchase the amount you need as 3/4 lb. to 1 lb. per person. Cut off the skin and whatever doesn't look edible. It may be soaked in water overnight till you are ready to cook. Put it in cheese cloth, tie it up.

Put in boiling water with salt. In a few minutes test it with fork, if it goes in easily it is done. Do not put it in the kettle and forget it. It needs watching because some is done in a couple minutes and sometimes it can be boiled for 5 - 10 minutes. All the fish is not the same.

Take it out of the kettle and put in a colander to drain before putting on a serving platter. Serve with melted butter or cream sauce.
