5 pounds potatoes

Directions:
Directions:
Boil 5 pounds peeled potatoes with 1 tsp. salt until tender. Drain and mash till smooth with 4 tbsp butter and 1/3 cup cream. Cool thoroughly.

Mix 3 cups potatoes and a scant cup of flour, mix gently so the flour is mixed in. Take about a 1/4 cup of dough, shape it into a round ball and then roll out on a floured cloth, to desired thinness. Place on 425 degree grill. Bake till brown spots appear, turn over and do the same. Remove to a clean cloth and cover with another cloth. Stack the rest of the lefsa, keeping on covering with the cloth so they steam and become moist. Put the whole stack and towels in a plastic bag till cold, then remove the top towels. Butter, eat and enjoy.

Potatoes may be boiled with skins on. Then peel when hot and put in a ricer and then add butter and cream and mix.
