1 1/2 c. (3/4 lb.) butter
3/4 c. sugar
3 egg yolks
1 whole egg
2 1/4 c. all purpose flour
3/4 c. currant jelly
1 c. (1/2 pt.) whipping cream
2 T. powdered sugar
1 tsp. vanilla

Cream butter and gradually add the granulated sugar, creaming well until it is light and fluffy. Beat in egg yolks one at a time. Add whole egg and beat until smooth. Sift flour and measure. Gradually mix into the mixture. Using a spatula, spread mixture evenly in thin layers into six round 8" cake pans. Bake at 375º for 12 - 15 minutes until edges are golden brown. Turn out of pans on cooling racks and cool. Spread the first 5 layers first with jelly and then the whipped cream that is sweetened with the 2T. powdered sugar and the vanilla. Lay the sixth layer on top and sift additional powdered sugar overall. Chill.

I got this recipe from Susie Croll back in the early 70's. I used it many times for Navy functions. It has a beautiful presentation. I have substituted jams for the jelly. Let it sit at room temperature for a while before cutting. Tastes like layers of shortbread. I only have 3 8" cake pans so baked them in two batches.
