1 1/2 lbs. Ground Beef
1 med. Onion, chopped
3 cans Beef Consommé or Broth
1 28 oz. can Stewed Tomatoes
2 c. Water
1 can Condensed Tomato Soup, undiluted
4 Carrots, chopped
3 Celery Stalks, chopped
1 Bay Leaf
Chopped Parsley
1/2 tsp. Thyme
Pepper to taste
8 tbsp. Barley Dried

Brown the Beef in a large Dutch Oven on low heat, drain off any fat. Add remaining ingredients and simmer on stove several hours or cook in a Crock Pot on Low all day or High 3-4 hours.

This is inexpensive, hearty and tasty. A kid pleaser. I learned a lot about feeding a crowd from my children's grandmother - Shirley Moroney, whose recipe this is. She fed her 7 children, her husband Bill and the rest of us that came along very well.
