1 c. Miracle Whip or Mayonnaise
1 c. Sugar
2 c. Flour
6 T. Cocoa Powder
2 tsp. Baking Soda
1/2 tsp. Salt
1 c. Water
1/2 tsp. Vanilla

Directions:
Directions:
Preheat oven to 350º. Prepare pans - 2 - 8" or 1 - 13" X 9" pan, grease well with shortening and dust with flour, or use Cooking Spray for Baking. Cream together - Miracle Whip or Mayo with 1 cup Sugar. Sift together - Flour, Cocoa, Baking Soda and Salt. Add dry ingredients to creamed mixture and alternate with the cup of water and vanilla. Mix until blended and smooth. Pour batter in prepared pans. Bake in preheated oven for 25-30 minutes. Ice with White Buttercream Icing.

This cake has been around as long as I can remember. Mom [Vena Weese Holland] always made it for Terry's birthday. I like to add a cup of cold coffee in place of the water to give it a bit of a mocha flavor; but it is amazing and moist in the original recipe. I had read that during the Depression when some cake ingredients may have been scarce that cakes such as this were developed since Mayonnaise is made of eggs and oil. Aunt Reba also sent in this recipe and called it Chocolate Salad Dressing Cake!
