2c. sugar
2c. water
2c. strong vinegar
1 tsp. cloves
1 tsp. allspice
1 tbl. cinnamon
2 bunches beets (peeled, cleaned, chopped or sliced)

Directions:
Directions:
Mix the spices with the sugar before adding the liquids. Add the rest of ingredients and then pour in a pan over the cut beets and boil for 10 minutes. Be sure to leave 4-5" on top of the beets when boiling so they won't bleed out. When done, pack in jars and seal! Label your jars so you know when to toss, if necessary.
