1 lb. Italian sausage or Chorizo
1 green pepper chopped
1 large can of tomato sauce
1 small yellow onion diced
1 med. can of stewed or diced tomato
1 tbl. olive oil

Directions:
Directions:
On the stove, combine the sausage and the onions together and cook until browned. Add the green onion and both tomatoes and cook on medium heat for about 20 minutes (so the ingredients get to know each other:). Serve over or with scrambled eggs, or hash browns, or both. Feel free to add a cheddar cheese on top. Grandma deemed this, "X'cellent!"
