FILLING:

10 oz pkg frozen chopped broccoli
6 3/4 oz can chunked, ground ham
10 3/4 oz can cream of mushroom soup



CREPES:
4 eggs
1/4 cup water
butter or margarine
1/2 cup sour cream

Directions:
FILLING: in a 2 quart pan, prepare broccoli according to package directions; drain. To cooked broccoli, add undiluted soup and ham with its juices. Cook, stirring often, until ham is heated through and broken into small chunks; keep warm.

CREPES: while filling heats, beat eggs and water with a fork in a small bowl until well mixed. In 6 or 7 inch skillet over medium heat, melt 1 tsp butter, tilting skillet to grease sides. Pour 2-3 tablespoons egg mix into skillet, tilting to make a thin pancake. When top is set and underside is delicately browned, run spatula around side and bottom to loosen; slide pancake onto plate. Repeat to make 7 more. Fill each pancake with broccoli mixture; roll and arrange them on a warm platter. Top with sour cream. 4 servings.

I got this recipe in a cooking class in 8th grade (just a few years ago now...). My crepes always turned out crappy, so I just make scrambled eggs and serve the filling on top now. No points for presentation, but a lot less fuss!
