1/2 cup flour
1 tsp salt
1/4 tsp pepper
1/4 tsp paprika
6 boneless, skinless chicken breast halves (1 1/2 lbs)
3 T vegetable oil
16 oz jar salsa
12 oz jar apricot preserves
1/2 cup apricot nectar
hot cooked rice or noodles

Directions:
Directions:
In a shallow bowl, combine flour, salt, pepper and paprika. Add chicken; turn to coat. In a skillet, brown chicken in vegetable oil; drain. Stir in salsa, apricot preserves and nectar; bring to a boil. Reduce heat; simmer uncovered, for 15 minutes or until sauce thickens and meat juices run clear. Serve over rice or noodles. 6 servings.
