white or wheat bread dough, homemade or Rhodes (cooled is best)
24 oz ricotta or blended cottage cheese
2 c. mozzarella
1/2 c. parmesan
2 eggs
1/2 lb. browned Italian sausage
1/2 can sliced olives
5 oz. frozen chopped spinach
1/2 small red onion, diced
cooking oil
oregano, parsley, garlic
spaghetti sauce

Directions:
Directions:
Thaw and drain spinach and olives and combine in large mixing bowl with ricotta/cottage cheese, mozarella, parmesan, eggs, sausage, and onion. Season with oregano, parsley, and garlic if desired. Stir thoroughly.

Take a palm-sized piece of dough and roll out onto greased counter into a circle about 6 in. across and 1/4 in. thick. Add 1 or 2 large spoonfuls filling to center of dough, and seal calzone closed into fooball shape by pinching and twisting the ends. Bake calzones on greased cookie sheets for 25 min. at 350 ºF. Serve with spaghetti sauce and parmesan.
