1lb chop meat round of chuck
1 med onion diced
1 med green pepper
1 cup herb bread crumbs
1egg
1 small can tomato sauce
salt and pepper to taste
3 or 4 peeled potatoes

Directions:
Directions:
Preheat oven to 400º. Mix meat, onion, green pepper, bread crumbs, 1/2 can of tomato sauce,egg salt and pepper (if dry add a little water). Form a large patty or a loaf. Place in a loaf or round cake pan. Cut potatoes in quarters and place on the meat loaf. Pour remaining tomato sauce over the top place on the center rack of oven. Cook 45 min. or when the potatoes are soft and the meat is cooked through.
