6 eggs
1 cup (or less) sugar
1 quart milk
3 tbsp. vanilla
1 cup ricotta, beaten
1 cup cooked rice

Directions:
Directions:
Beat eggs. Beat in sugar. Add rest of ingredients and mix.
Bake in a greased casserole dish 20 minutes at 450 degrees.
Lower heat to 350 degrees and bake for 40 to 45 minutes.
Test with sharp knife. Sprinkle with nutmeg if desired.
