3 tbsp. butter
1 bunch leeks
1 lb potatoes
5 cups chicken or veggie stock
Salt and pepper

Directions:
Directions:
Clean and chop leeks. Compost green stems. Cook leeks in butter until soft, not brown. Slice potatoes, stir in with leeks. Add stock and simmer for about 30 minutes or until potatoes are soft. Puree in blender. Add salt and pepper. Optional: add one cup of cream or a couple cups of chopped greens (kale or spinach).
