"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Preheat oven to 350º. Use either an 8x8 inch square pan or a 9 inch pie pan. Core and cut into slices 4 cups of apples. It is not necessary to peel them unless you prefer them that way. Place apples in pan and sprinkle with 1-2 tbsp. lemon juice.

To prepare topping:
Mix together 1/2 stick of butter, mashed or cut into small pieces
1/2 cup flour
1/2 cup brown sugar
a pinch of salt
1 tsp. cinnamon (optional)
The mixture should be crumbly. Don't over mix or it will get oily and turn into a dough. Sprinkle mix on top of apples

Bake for about 30 minutes. Serve warm with vanilla ice cream!
