1 6oz-8oz. can of Alaskan Red Salmon
1/2 white onion grated
1 large brown organic egg
2 tbsp. or a little more of matzo meal
fresh black pepper to taste

Directions:
Directions:
Scramble the egg in a glass or ceramic bowl. Add can of salmon with juice, grated onion, matzo meal, black pepper. Make into small patties about 3" in diameter and about 1/2" thick. Fry in a little olive oil until brown on both sides and cooked in the middle about 6 to 8 minutes. Squeeze lemon juice on patty after removed from pan. Enjoy with spaghetti with tomato sauce or mashed potatoes and a salad or green vegetable.
