2 Cups Plain Flour
2 Eggs
1 Tsp. Vanilla
1 Tsp. Soda
1/2 Cup Raisins
1/2 Cup Cooking Oil
3 Large Banana's (real ripe)
1/2 Cup Chopped Pecans
1 1/2 Teaspoon Sweet N Low (14 packs)
4 Teaspoons Buttermilk

Pre heat oven 350

In Food Processor put Raisins and chop until real fine. Add Banana's...Chop with raisins. Add eggs, Chop again. Add Cooking Oil, Buttermilk and Vanilla, Chop all this together. Sift Flour, Soda and Sweet N Low together. Put Flour mixture into Food Processor and mix real good, add Nuts and blend. Put into 2 Loaf Pans that have been sprayed with Pam. OR.....Spray Muffin Pans and fill 3/4th. of the way to the top. Place into pre heated oven for 30 to 40 Minutes.

This was something that I took to my Mother (Cullie Moore, Sulli and Jasper Knights Great, Great Grandmother) for snacks in the Rest Home. She looked forward to having her snacks. I like to do the Muffins for gift baskets too.
