Fresh yellow fin tuna (1 to 2 pound)
mayonnaise
1 sweet onion
black pepper
salt
1 loaf fresh sliced Italian Bread
1 stick butter
celery

Directions:
Directions:
Cut up 1 ( 1 to 2 pounds) chunk of tuna in small pieces. Put in pot of water to boil tuna till its white. Not necessary to bring to a full boil, just until tuna is white. Drain in colander and rinse with cool water and let cool. Chill tuna in refrigerator until meat is firm. Dice onion, dice a small portion of celery. Break up tuna to small pieces.

Mix tuna with 2 heaping tablespoon Hellmann mayonnaise, onions,celery, dash of salt, pepper and stir.

Spread mayonnaise on each side of bread, add tuna salad. Close sandwich, butter outsides and brown in electric skillet.
