6.5 oz jar marinated artichoke hearts
1/4 cup pitted ripe olives, chopped
2 T red onion, chopped
4 medium roma tomatoes, coarsely chopped
3 garlic cloves, finely chopped
2 T fresh basil leaves
1/2 to 3/4 bottle oil based Italian dressing
salt and pepper to taste
leaf lettuce
taco chips

Directions:
Directions:
Drain marinade from artichokes into 2 qt bowl. Chop artichokes and mix with olives and red onion; add to bowl, with tomatoes, garlic and Italian dressing. Snip basil and add to vegetable mixture. Mix gently. Season with salt and pepper. Spoon salsa into a bowl lined with leaf lettuce. Place in the center of a serving plate. Surround with taco chips.

I entered this recipe in the Advance Newspaper cooking contest in 2003 and won 1st place in the appetizer division in the cookoff.
