4 28 oz cans Italian whole peeled tomatoes, with basil if you can find it that way
1 12 oz can tomato paste
1 medium onion, diced
2-3 cloves garlic, crushed
1-2 T vegetable oil
1 1/2 cups water
vodka
cooked penne pasta
4 oz proscuitto

Directions:
Directions:
Saute onion and garlic in vegetable oil until well blended. Add tomatoes, tomato sauce and water. Simmer, uncovered, over low heat for about 4 hours. Gently chop tomatoes while stirring the sauce. After simmering, add 1/4 cup vodka for every 4 cups of sauce. You may add more or less to taste. Blend in food processor until smooth. Return to pan and simmer until mixture reduces by 1/2. Pour sauce over penne pasta and sprinkle chopped proscuitto on top.

I watched my son-in-law, Marc Simpson, make this wonderful sauce while visiting in New York. The aroma that fills the house is awesome! I now make it as a special dish to have with friends.
