1 lb. mild ground Sausage (browned)
2 cloves garlic
1/2 c. onion
3 cans black-eyed peas (un-drained)
1 can rotel tomatoes
1 large can regular tomatoes
1/2 c. uncooked rice
red pepper - season to taste

Directions:

Cook in crock pot overnight.
If you cook on the stove top, it will take about 1 hour or so until it is done.
