7 to 8 sweet potatoes, peeled and sliced thinly (I use a mandoline)
1 small can chilpotle peppers (slice up pepper and mash to make a puree)
2 cups heavy cream

Directions:
Directions:
Mix the heavy cream and chilpotle puree. Layer the sliced sweet potatoes, salt and pepper in a greased 9x13 pan. Cover with chilpotle mixture. Repeat layers, ending with chilpotle cream mixture. Bake at 350º for 45 minutes covered; remove cover and continue baking for another 45 minutes uncovered.

Note: For white potatoes, replace the chilpotle cream with tomatillo cream sauce, same size can, same brand (Herdez). And you'll need an equivalent weight of white potatoes, more like 12 or so.
