1-1/2 lb. red potatoes
1/3 c. sour cream
1/3 c. mayonnaise
1/4 c. cooked bacon, diced
1/4 c. fresh dill, chopped
1 T. shallots or red onion, minced
1/4 c. Creole mustard
2 T. lemon juice
salt and white pepper to taste

Directions:
Directions:
Boil the potatoes in salted water until they are tender and a paring knife can be pushed all the way through a potato with little resistance. Drain them in a colander and cool under running cold water. Place in the refrigerator for several hours to cool completely. Cut the potatoes into wedges lengthwise and place in a metal bowl. Add the rest of the ingredients to the bowl, Combine everything well and taste to adjust seasonings.
