4 T. olive oil, divided use
2 (8 oz. each) russet potatoes, peeled, cut into 1/16" thick rounds
salt and pepper to taste

Brush large nonstick skillet with 1 T. oil. Carefully arrange 8 potato slices in concentric circle in skillet, overlapping slightly and forming 3 1/2 to 4 inch diameter round. Season with salt and pepper. Heat skillet over medium-high heat. Cook until galette is golden brown on bottom, about 4 minutes. Using wide spatula, turn galette over (rearrange potato slices as needed to re-form round). Cook until potatoes are tender and brown on bottom, about 3 minutes. Using spatula, transfer galette to large baking sheet. Repeat forming 6 galettes total, adding more oil to skillet by tablespoonfuls as needed. (Can be made 4 hours ahead.) Let stand at room temperature. Before serving, rewarm in 400º oven until heated through, about 7 minutes.
