1 head red cabbage
2 T. sugar (or to taste)
1 apple, peeled and chopped
1 onion, chopped or finely sliced
1 to 2 bay leaves
1/2 tsp. cloves (or to taste)
apple cider vinegar (enough to cover 1/4" of bottom of pot)

Wash cabbage, remove any damaged leaves, cut into quarters, core and shred thinly. Put cabbage, onion and apple into pot with vinegars, sugar, apple, bay leaves and clove. Bring to boil; turn down to a slow simmer. Stir occasionally for about 2 hours

Note: Options: Fry several slices of bacon (chopped) add to cabbage (including the bacon grease). Add 1/2 tsp. fennel seeds and/or 1/2 tsp. caraway seeds.
Add more vinegar if necessary
