1 T olive oil
1 medium onion, chopped
2 garlic cloves, chopped
2 medium sweet potatoes, peeled and cut into 1/2" pieces
1 T chili powder
1 16 oz jar mild salsa
1 cup water
2 15 oz cans black beans
1/2 cup sour cream
1/4 cup chopped fresh cilantro leaves

Directions:
Directions:
Heat oil in pan over medium-high heat. Add onion and garlic and cook 4 minutes until soft. Stir in sweet potatoes, chili powder, salsa and water; heat to boiling. Reduce heat to medium-low and cook 12-15 minutes until potatoes are fork tender, stirring occasionally. Add beans and their liquid and cook 3 minutes to blend flavors. In small bowl, combine sour cream and cilantro and serve with chili. Serves 4.
