"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Beef Cutlets, by Sarah Chacko, is from The LSPC Cookbook Project,

families or individuals create heirloom cookbook treasures.
1 lb. minced beef pinch of ginger pinch of minced garlic salt to taste 1 tsp. garam masala 4 potatoes 1 egg 1/2 cup bread crumbs Pinch of turmeric powder 1/2 cup oil for frying
Cook the minced beef with ginger, garlic, salt and garam masala powder until well done. Boil the potatoes in water with turmeric powder until potatoes are completely cooked; strain it and mash the potatoes. Then mix the cooked minced beef and the mashed potatoes; put aside. Take one egg and beat it in a bowl and in another bowl put the bread crumbs. The minced beef and potatoes should be made into thin patties; dip them in egg and coat with bread crumbs. Finally, fry the patties in hot oil and when the patties turn light brown drain on a paper towel. Eat them with tomato ketchup and enjoy.
