Green Rice:

2 c. uncooked rice
2 c. grated cheddar cheese
2 c. milk
2 c. chopped parsley
4 eggs, beaten
1/2 c. butter, melted
1 small onion, chopped
salt


Shrimp Newburg:

2 T. butter, melted
1/4 c. onion, diced
1 can frozen shrimp soup
1 can medium size shrimp
1/2 pt. sour cream
1/4 tsp. curry powder

Directions:
Directions:
Green Rice: Boil the rice in salted water; drain. Grate cheese and chop parsley and onion. Add all other ingredients to rice. Bake 45 minutes to 1 hour in 350º oven. May be served alone or with a creamed ham, seafood or chicken sauce.

Shrimp Newburg: Saute the onion in the butter for about 15 minutes. Add remaining ingredients. Serve over the rice.
